Scientists, suggests that when buying produce such as a bag of salad, it important to realize that vegetables that received continuous amount of light during storage had more nutrition, then vegetables that did not get as much light.
This could suggest that produce near the top is healthier due to the light exposure from the grocery store.
Researchers found that florescent light significantly increase in levels of carotenoids and vitamins C, E, K, and B9, or folate, by effecting the photosynthesis of spinache leaves.
More research needs to be done, but this could suggest new ways to store produce and maybe new light technology for grocery stores that can optimize nutrition levels and expiration dates.
